In the last few years at Harokopio University, especially in the Department of Geography, open source Geospatial software is being taught and used for research. Furthermore, lctools -an R package for spatial analysis (https://cran.r-project.org/web/packages/lctools/index.html), as well as e-books on Spatial Analysis with CC licenses are available providing an integrated Open Geospatial Science education.
